Ingredients
  

For Paneer Paratha dough

  • 3/4 cup whole wheat flour gehun ka atta
  • 3/4 cup plain flour maida
  • 2 tsp oil
  • salt to taste

To be mixed into a stuffing For Paneer Parathas

  • 1 cup paneer crumbs
  • 4-5 green chillies finely chopped
  • 1 onion finely chopped
  • 1 tbsp. coriander finely chopped
  • 1 tsp. mint leaves finely chopped
  • salt to taste
  • 2 tbsp. ghee

Other ingredients

  • whole wheat flour for rolling
  • ghee or oil to shallow fry

Instructions
 

For the paneer parathas dough

  • Combine all the ingredients and knead into a soft, smooth dough using enough water.
    3/4 cup whole wheat flour, 3/4 cup plain flour, 2 tsp oil, salt to taste
  • Keep aside for 30 minutes.

How to proceed to make paneer parathas.

  • to make paneer parathas, divide the dough and stuffing into 5 equal portions.
    1 cup paneer crumbs, 4-5 green chillies finely chopped, 1 onion finely chopped, 1 tbsp. coriander finely chopped, 1 tsp. mint leaves finely chopped, salt to taste, 2 tbsp. ghee
  • Roll out the portion of the dough into a circle of 75 mm. (3″ diameter) using whole wheat flour for rolling.

  • Place one portion of the stuffing in the centre of teh circle. Bring together all the sides in centre and seal tightly.
  • Roll out again into a circle of 125 mm (5″ diameter), using whole wheat flour for rolling.

  • cook on a hot tava (griddle), using a little ghee or oil, till both sides are golden brown in colour.

  • Repeat with the remaining dough and stuffing to make 4 more paneer parathas.
  • Serve the paneer parathas hot with curds or pickle.
