Khada Desi Palak is a mouth watering healthy curry made from Spinach and flavoured with garlic and green chillies.

Ingredients
  

  • 6 bunch spinach पालक
  • 1 tbsp clarified butter घी
  • 1 tbsp chopped garlic लेहसुन
  • 2 chopped green chillies हरी मीर्च
  • 2 medium chopped onions प्याज
  • 1 tsp roasted dried fenugreek leaves powder कसुरी मेथी
  • 1/2 inch julianneginger अदरक
  • 2-3 cloves slit and fried garlic लेहसुन
  • 1 tsp lemon juice नीम्बु का रस
  • 1 tsp cumin seeds जीरा
  • salt to taste (नमक)

Instructions
 

  • Wash and blanch the spinach.
    6 bunch spinach
  • In a heavy bottom pan add ghee (clarified butter) and heat. Temper with cumin seeds, add garlic, green chillies, ginger and saute. Add chopped onion and caramelise it.
    1 tbsp clarified butter, 1 tbsp chopped garlic, 2 chopped green chillies, 1/2 inch julianneginger, 1 tsp cumin seeds, 2 medium chopped onions
  • Add blanched spinach and cook for three to four minutes and adjust salt.

  • Garnish with methi powder, fried garlic flakes and lemon juice.
    1 tsp roasted dried fenugreek leaves powder, 2-3 cloves slit and fried garlic, 1 tsp lemon juice

Notes

  • Put the spinach in an ice bath when blanched to avoid discolouring.

    This recipe is very easy to prepare I guess, at least it seems so while reading the recipe. By make it spicy, it works the best for spicy food lovers.
    Now I have ordered all the ingredients required for this in an online supermarket and will try it out.

    Hi Lakshmi, thank you for your comments. Even I am spicy food lover like you. Same thought came in my mind while preparing this recipe. But believe me, this gives you altogether a different taste of Spinach curry. At least I would suggest give it a try without altering recipe once and then give me reply how it tasted.
