For the rice

For the baking
mozzarella cheese as per taste

Instructions
Prepare the Rice:
Heat oil in a pan and sauté the chopped onion for about 2 minutes.
3 tbsp oil,
1 onion
Add the ginger-garlic paste and fry for another minute.
12 mm. piece ginger,
4 cloves garlic
Mix in the chili powder, boiled mixed vegetables, and optional food color, and sauté for 2 more minutes.

1 cup boiled mixed vegetables
Add the steamed rice and salt, and stir until everything is well combined.
2 1/4 cups Steamed Rice,

Make the Cheese Patties:
In a bowl, combine boiled and mashed potatoes with crumbled paneer, coriander, flour, green chilies, and salt.
2 potatoes,
100 gms crumbled paneer,
handful of fresh coriander leaves,
2 tbsp maida,
2 green chillies,
salt to taste
Shape the mixture into small patties and cook them on a hot tawa (griddle) with a little oil until golden brown on both sides.
Prepare the Tomato Gravy:
Heat oil in a pan and sauté the chopped onion for 2 minutes.

Add the garlic and cook for a few seconds until aromatic.

Add chopped tomatoes, ajwain or oregano, chili powder, sugar, and salt. Cook until the tomatoes are soft.
3 large tomatoes,
a pinch of carom seeds,
1/2 tsp chilli powder,
1/2 tsp sugar,

Blend the mixture in a mixer, but do not strain it. If the gravy is too thick, you can add a little water to adjust the consistency.
Assemble and Bake:
Spread the hot rice evenly in a greased baking dish.
Place the cheese patties over the rice layer.
Pour the tomato gravy over the patties, ensuring everything is covered.
Sprinkle grated processed cheese and mozzarella cheese on top.

Bake in a preheated oven at 200°C (400°F) for 10 to 15 minutes, or until the cheese is melted and bubbly.
Serve Hot:
This dish is best served hot, straight from the oven. Pair it with a side salad or a glass of chilled lemonade for a complete meal.
