The Story Behind the Dish
This Mexican Cheese Pattice Baked Rice was born out of my love for experimenting with flavors.
One day, I found myself craving both Indian and Mexican cuisine, so I thought, why not combine them? The result was nothing short of magical.
When this dish came out of my oven, the cheesy aroma filled the kitchen, and my daughter couldn’t wait to dig in. She was so excited by the texture and smell that she could hardly wait for me to finish taking pictures!
This dish has since become a family favorite, and I’m sure it will be a hit at your home too.

Cheese Pattice Mexican Fried Rice
Ingredients
For the rice
- 2 1/4 cups Steamed Rice ऊबला चावल
- 1 onion chopped (प्याज)
- 1 1/2 tsp chilli powder लाल मीर्च पाव्डर
- 1 cup boiled mixed vegetables ऊबले हुइ मीक्स तर्कारी
- 3 tbsp oil तेल
- salt to taste नमक
- red food color optional
To be ground into a paste (for the rice)
- 4 cloves garlic लेहसून
- 12 mm. piece ginger अदरक
For the cheese patties
- 2 potatoes boiled and mashed (आलू)
- 100 gms crumbled paneer पनीर
- handful of fresh coriander leaves
- 2 tbsp maida (refined flour)
- 2 green chillies
- salt to taste
For the tomato gravy
- 3 large tomatoes टमाटर
- 1 onion प्याज
- 3 cloves of garlic लेहसून
- a pinch of carom seeds ajwain or 1/2 teaspoon dried oregano (अजवैन / ओरेगानो)
- 1/2 tsp chilli powder लाल मीर्च पावडर
- 1/2 tsp sugar चीनी
- 1 tbsp oil तेल
- salt to taste नमक
For the baking
- mozzarella cheese as per taste मोत्जारेला / पीजा चीज
- 3 tbsp grated processed cheese प्रोसेजड चीज
Instructions
Prepare the Rice:
- Heat oil in a pan and sauté the chopped onion for about 2 minutes.3 tbsp oil, 1 onion
- Add the ginger-garlic paste and fry for another minute.12 mm. piece ginger, 4 cloves garlic
- Mix in the chili powder, boiled mixed vegetables, and optional food color, and sauté for 2 more minutes.1 1/2 tsp chilli powder, 1 cup boiled mixed vegetables
- Add the steamed rice and salt, and stir until everything is well combined.2 1/4 cups Steamed Rice, salt to taste
Make the Cheese Patties:
- In a bowl, combine boiled and mashed potatoes with crumbled paneer, coriander, flour, green chilies, and salt.2 potatoes, 100 gms crumbled paneer, handful of fresh coriander leaves, 2 tbsp maida, 2 green chillies, salt to taste
- Shape the mixture into small patties and cook them on a hot tawa (griddle) with a little oil until golden brown on both sides.
Prepare the Tomato Gravy:
- Heat oil in a pan and sauté the chopped onion for 2 minutes.1 tbsp oil, 1 onion
- Add the garlic and cook for a few seconds until aromatic.3 cloves of garlic
- Add chopped tomatoes, ajwain or oregano, chili powder, sugar, and salt. Cook until the tomatoes are soft.3 large tomatoes, a pinch of carom seeds, 1/2 tsp chilli powder, 1/2 tsp sugar, salt to taste
- Blend the mixture in a mixer, but do not strain it. If the gravy is too thick, you can add a little water to adjust the consistency.
Assemble and Bake:
- Spread the hot rice evenly in a greased baking dish.
- Place the cheese patties over the rice layer.
- Pour the tomato gravy over the patties, ensuring everything is covered.
- Sprinkle grated processed cheese and mozzarella cheese on top.mozzarella cheese as per taste, 3 tbsp grated processed cheese
- Bake in a preheated oven at 200°C (400°F) for 10 to 15 minutes, or until the cheese is melted and bubbly.
- Serve Hot: This dish is best served hot, straight from the oven. Pair it with a side salad or a glass of chilled lemonade for a complete meal.
