Gujarati Cabbage Potato curry is another dish that eases someone who has never had an Indian dish into loving Indian food. Gujarati food and this Curry is a very light and yummy version of the Gujarati Cabbage and Potato dish typically eaten with rotis, phulka or chapatis. In Gujarati, the dish is called Kobi Batata nu Shaak or Kobi Bataka nu Shaak.

Inspiration of Gujarati Cabbage Potato Curry

In many Gujarati homes, the emphasis is generally on simple food as their everyday meal. So vegetables tend to be very simply cooked. Here is one such excellent version of Cabbage Potato curry. In Gujarat we often get the youngest, greenest cabbage in market. For the curry, you may want to cut cabbage into very thin, long shreds or grate it in food processor. 

Gujarati Cabbage Potato Curry Served with Roti / Chapathi

My inspiration of Gujarati Cabbage Potato curry came from my mom’s kitchen. Usage of Sugar without making this curry sweet is the key differentiator.

This is one of those well-balanced curries with an initially hot impact that quickly slides down a notch with sweet granulated sugar, and waterlogged cooked cabbage along with potatoes.

Gujarati Cabbage Potato Curry is simple, easy and delicious Indian style curry that can be enjoyed with Roti and Phulka. We would have Gujarati Toor Daal or Gujarati Kadhi with it.

Winter is the best season when we are lucky to get and enjoy a wide variety of vegetables, and cabbage is one of them. In Gujarati aka ‘Kobi’ and in Hindi ‘Patta Gobi’.

What is the best Way to prepare Cabbage? Or How do you cook Cabbage and Potatoes?

Answer to this question, purely depends on Individual’s choice. But for me, I like anything which is Simple, Easy and Quick. Cabbage and Potatoes are heavenly pair and I like to always prepare this recipe of Gujarati Cabbage Potato Curry whenever I get a chance.

But individually Cabbage can be used to prepare Coleslaw sandwiches, can be put into stir fry noodles for that nice bite and crunch. Also, quick stir fry Gujarati side dish, Sambharo can be prepared by adding some Carrots along with cabbage. And if you are not a Roti and Curry guy, then Cabbage parathas are your goto choice.

Gujarati Cabbage Potato Curry | Kobi Batata nu Shaak

Super quick Gujarati Cabbage Potato curry or in Gujarati Kobi Batata nu Shaak is a quick, easy and yummy version of Indian curry using Cabbage and Potato.

Ingredients
  

  • 2 cups cabbage
  • 1 cup potato
  • 2 tbsp oil
  • 1/2 cup tomato
  • 1/2 tsp mustard seeds
  • 1/4 tsp Asafoetida Hing
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1/2 tsp sugar
  • Salt to taste
  • Coriander for garnish
  •  

Instructions
 

  • Heat the oil in a large skillet over medium heat.
    2 tbsp oil
  • Add mustard seeds and allow it to splutter. Now add turmeric powder and Asafoetida (hing)
    1/2 tsp mustard seeds, 1/2 tsp turmeric powder, 1/4 tsp Asafoetida
  • Add shredded cabbage and potato. Stir and cook for 1 or 2 minutes.
    2 cups cabbage, 1 cup potato
  • Add red chilli powder and salt, stir and cook for 1 minute. Reduce the heat to medium and cover. Cook, stirring frequently, for 10 minutes, or until the potatoes are done 75%.
    1 tbsp red chili powder, Salt to taste
  • Add tomatoes and sugar, cover and cook for another 5 minutes, or until the potatoes are soft . (Add 1 tablespoon of water if the mixture becomes too dry.)
    1/2 cup tomato, 1/2 tsp sugar
  • Garnish with fresh coriander and serve with Chapati or Rice.
    Coriander for garnish

  • You can add 1/2 cup Fresh / Frozen Green peas to this curry for variations.
