Heat the oil in a large skillet over medium heat.

Add mustard seeds and allow it to splutter. Now add turmeric powder and Asafoetida (hing)
1/2 tsp mustard seeds, 1/2 tsp turmeric powder, 1/4 tsp Asafoetida
Add shredded cabbage and potato. Stir and cook for 1 or 2 minutes.
2 cups cabbage, 1 cup potato
Add red chilli powder and salt, stir and cook for 1 minute. Reduce the heat to medium and cover. Cook, stirring frequently, for 10 minutes, or until the potatoes are done 75%.
1 tbsp red chili powder, Salt to taste
Add tomatoes and sugar, cover and cook for another 5 minutes, or until the potatoes are soft . (Add 1 tablespoon of water if the mixture becomes too dry.)
1/2 cup tomato, 1/2 tsp sugar
Garnish with fresh coriander and serve with Chapati or Rice.
