Indian Bruschetta with Tamarind Chutney

Originally Bruschetta is a traditional Italian Garlic Bread which cosists of Roasted Bread with Garlic and topped with some Extra virgin Olive Oil.

People innovated and came up with some variations like topping it up with Vegetables, beans, cured meats, etc.

Even I had an innovation, a Innovation which is fusion of Indian and Italian Cuisine.

And here is the result of my Innovation. I wanted to make simple, delicious yet Quick recipe so I kept it very simple.

I hope my readers will appreciate this effort.

Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Yield: Makes 20 pieces

Ingredients:
1 Baguette French bread cut into 1-inch slices about 20 pieces or Simple Sandwich bread will work
1 cup diced plum tomatoes
2 Green Onions chopped
125 grams crumbled feta cheese
1 small red onion diced fresh or pan sauteed in tsp olive oil
2 tbsp finely chopped fresh cilantro or corriander
1/2 tsp tamarind chutney

Method :

1. Preheat Griller. Place bread slices on Grilling pan and Grill each side until lightly toasted. Set aside.
2. In medium bowl, gently combine remaining ingredients, except chutney, until well blended.
3. Top each toasted bread slice with generous mound of mix.
4. Serve on platter, garnished with a drizzle of chutney
