A delicious accompaniment ready in minutes! Carrots and Green Chilli, sautéed lightly with mustard seeds and tossed some oil—that’s it! remember that the crunchiness of the vegetables is the unique selling proposition of Gajar Marcha no Sambharo. So, never overcook the veggies, and consume it fresh before the crispiness sags away! it tastes best when made fresh and can be stored for 4 to 5 days when refrigerated.

I love Sambharo – a warm Indian Salad, prepared using Super Food like Carrot and we can also add Cabbage to this Gujarati Gajar Marcha no Sambharo. What a magic happens when few carrots are sauteed with spicy chilies and few spices steamed until soft. Due to its uncomplicated nature, Gujarati Sambharo is a quick accompaniment to any Indian meal. This is rich in beta-carotene (carrots) and I would highly recommend including this simple, delicious accompaniment to any of your meals.

Gajar Marcha no Sambharo (Carrot Chili Salad recipe)

Ingredients
  

  • 1 medium carrot
  • 4 Spicy green chilies
  • 1/4 tsp Asafoetida Hing
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • 1 tsp Oil
  • Salt as per taste

Instructions
 

  • Heat the oil in a broad pan and add the mustard seeds.
    1 tsp Oil, 1/2 tsp mustard seeds
  • When the seeds crackle, add the asafoetida, Turmeric powder, carrots and chilies, mix well and sauté on a medium flame for a 1 mins.
    1 medium carrot, 1/4 tsp Asafoetida, 1/4 tsp turmeric powder, 4 Spicy green chilies
  • Add little salt mix well and saute for another 2 mins.
    Salt as per taste
  • Serve immediately or store refrigerated in an air-tight container.
