Cheese Croquettes

A potato-filled croquette called Aloo tikki is very popular in northern India and is typically served with a stew. They are mostly eaten as snacks at home and are also popularly sold by road-side vendors. In the Indian state of West Bengal, it is called alu chop as in Bangladesh. Sometimes it is called a “cutlet” and eaten plain or as a fast food variation that is served inside a hamburger bun (like a vegetarian burger). Meat croquettes called kababs are made with minced mutton. Lightly spiced beef croquettes are a popular snack and appetiser among Goan Catholics owing to their Portuguese influence, though consumption of beef is not common in India except for places like Goa and Kerala.

Cooking time: 10 mins
Total time: 25 mins
Yield: Makes 5 to 6 croquettes

Ingredients:
2-3Boiled and Peeled Potatoes (आलू)
1 cupGrated Carrot
(गाजर) 1 cupGrated Cauliflower (फूल गोबी)
1 cupCheese (चीज)
2 slicesBrown Bread (ब्राव्न ब्रेड)
1chopped green chilly (हरी मीर्च)
2 tbspchopped corriander or cilantro (हरा धनीया)
5-6chopped mint leaves (पुदीना)
salt to taste (नमक)
oil for deep fying (तेल)
1 tbsptomato ketchup (टमाटर का केचप)

Method :

1. Soak brown bread in a bowl for 1 min. Drain water and crush breads.
2. Add grated carrot, grated cauliflower, green chilly and coriander. Add crushed boiled potatoes to this mixture.
3. Add salt, cheese, tomato ketchup, mint leaves and mix it to make a dough.
4. Make cylindrical shape (usually croquettes are in cylinderical or disk shape) or any other shape out of this mixture and keep it aside.
5. Heat oil and deep fry croquettes on slow flame till they are golden brown.
6. Serve Cheese Croquettes with Tomato Ketchup or Green Chutney.
