Puran poli is a classical Marathi Dish served as a dessert on the occassions of Holi and Padwa in Maharashtra and in Gujarat mostly on the Ocassion of Holi. To prepare Puran Poli stuffing, Chickpea lentils are boiled and cooked with Jaggery or Sugar . This stuffing is then cooled at room temperature and Stuffed Breads (Rotis) are prepared.
The method of preparation varies place to place. Like in Konkan they add grated coconut. Nutmeg will be replaced with Cardamom or sometimes with both elsewhere. Even method of rolling the stuffed dough may differ too.
So lets explore this authenticate classical Puran Poli dish in Gujarati Style.
Ingredients:
For the filling
1 cup toovar (अर्हर) dal
1 cup sugar (चिनि)
a few saffron (केसर) strands
1/2 tsp cardamom (एलाइचि) powder
1/4 tsp nutmeg (जाइफल) powder
a pinch of mace (जावंत्रि) powder
2 tbsp ghee (घी)
For the dough
2 cups whole wheat flour (गेहु का आटा)
2 tbsp oil (तेल)
For the serving

Method
For the filling
1. Wash and pressure cook the dal in 1 1/2 cups of water.
2. Drain any excess water and keep aside.
3. Heat the ghee in a pan.
4. Add the dal and sugar and cook till the mixture thickens, stirring continuously.
5. Dissolve the saffron in a little water by rubbing.
6. Add the cardamom and nutmeg powders, mace powder, saffron liquid and mix well.
7. Cool, divide into 12 to 15 portions and keep aside.
For the dough
1. Combine the flour and oil and knead into a soft dough using water.
2. Divide into 12 to 15 portions and keep aside.
How to proceed
1. Roll out one portion of the dough into a 75 mm. (3″) diameter circle.
2. Place a portion of the filling mixture and fold the edges of the dough over the filling.
3. Pinch the edges together to seal the filling in.
4. Flatten the dough and roll again into a 100 mm. (4″) diameter circle.
5. Cook on a tava over a medium flame with Ghee till golden brown in colour on both sides.
6. Repeat for the remaining dough and filling.
7. Top-up with lots of ghee and serve hot.
Tips
1. The more the ghee on top of your Puran Poli, the more delicious it tastes.
2. Microwave the filling mixture for 7 to 10 minutes to save on cooking time.
