Goda Masala, also known as Kala Masala (black spice blend), is a unique and versatile spice powder used extensively in Maharashtrian cuisine. This distinctive blend boasts a deep, blackish color and an intense, aromatic fragrance. Unlike other spice combinations, Goda Masala possesses a flavor profile unlike any other, adding an extra layer of depth and complexity to any vegetarian dish.

As you know, spices are the cornerstone of Indian cooking. From the subtle to the bold, these fragrant ingredients weave their magic into countless dishes, creating a symphony of flavors, aromas, and textures. One such recipe that exemplifies this magic is Gavaar chi Bhaji, a Maharashtrian-style cluster bean curry, that finds its soul mate in Goda Masala.

Unlocking the Flavors: Two Ways to Goda Masala

This recipe offers two methods for crafting your Goda Masala – an authentic version and a quicker option.

The Authentic Approach (For the Discerning Palate):

This method uses a wider variety of spices, resulting in a more complex and nuanced flavor profile.

The Quick and Easy Goda Masala:

This method is perfect when you’re short on time but still crave that Goda Masala punch.

As you know by now, spices are at the heart of Indian cooking! The perfect blend of spices gives Indian food its subtle magical flavours, aromas, and texture in making it exceptionally scrumptious, and exotic. One such recipe always close to my heart is Gavaar chi bhaji (Maharashtrian style cluster bean curry). Other related recipes :

Ingredients
  

Ingredients for Authentic Method :

  • ¼ cup grated dry coconut
  • 1 ½ tbsp cumin seeds
  • ½ tsp caraway seeds
  • 4 black cardamoms
  • 10 cloves
  • 3 tsp black peppercorns
  • 10-12 bay leaves
  • ¾ cup coriander seeds
  • 6- inch cinnamon stick
  • 1 mace blade
  • 4 whole dry red chilies
  • 1 tsp sesame seeds
  • 1 tbsp stone flower dagad phool (optional)
  • 1 tsp cobra’s saffron nagkeshar (optional)
  • ¼ tsp asafoetida
  • 1 tbsp oil

Ingredients for Quick method:

  • ¼ cup grated dry coconut
  • ¼ cup chopped onion
  • 4 whole dry red chilies
  • 1 tbsp oil

Instructions
 

Instructions – Authentic Method:

  • Heat oil in a pan and roast cumin seeds, caraway seeds (ajwain), black cardamoms, cloves, black peppercorns, bay leaves, and coriander seeds.
    1 ½ tbsp cumin seeds, ½ tsp caraway seeds, 4 black cardamoms, 10 cloves, 3 tsp black peppercorns, 10-12 bay leaves, ¾ cup coriander seeds, 1 tbsp oil
  • Add cinnamon, mace, dry red chilies, sesame seeds, dry coconut, dagad phool (optional), nagkeshar (optional), and asafoetida. Roast until fragrant.
    ¼ cup grated dry coconut, 6- inch cinnamon stick, 1 mace blade, 4 whole dry red chilies, 1 tsp sesame seeds, 1 tbsp stone flower, 1 tsp cobra’s saffron, ¼ tsp asafoetida
  • Allow the mixture to cool completely before grinding into a fine powder.
  • Store in an airtight container for long-lasting flavor.

Instructions – Quick Method:

  • Heat oil in a pan and roast dry coconut, chopped onion, and dry red chilies.
    1 tbsp oil, ¼ cup grated dry coconut, ¼ cup chopped onion, 4 whole dry red chilies
  • Allow the mixture to cool completely before grinding into a fine powder.

Notes

While the quick version offers a convenient option, it lacks the complexity and depth of the authentic method. It’s best used immediately and not stored for extended periods.
