Ingredients
  

For the Sandwiches:

  • 4 Panini buns or burger buns, focaccia, etc.
  • 1 large red pepper thinly sliced (optional)
  • 8 slices pineapple
  • 8 slices feta cheese
  • 4 large lettuce leaves
  • Salt and freshly ground black pepper to taste
  • Butter for grilling

For the Spread (Optional):

  • ½ cup cheese spread
  • 1 clove garlic grated
  • 2 tablespoons finely chopped celery
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Make the Spread (Optional): In a bowl, combine the cheese spread, grated garlic, chopped celery, salt, and pepper. Spread this mixture generously on one side of each opened panini bun.

  • Assemble the Sandwiches: Place a large lettuce leaf on the bottom half of each bun. Top with 2 slices of feta cheese, some red pepper slices (if using), and 2 slices of pineapple.

  • Season and Close: Sprinkle with salt and freshly ground black pepper to taste. Top with the other half of the bun.
