Schezan Fried Rice Recipe (शेझवान फ्राइड राइस)

Schezuan rice is a Indo chinese fusion fried rice, if you love spicy food. The Schezuan sauce in this rice adds spicy flavour to the whole dish.

Ingredients
  

  • 2 cups boiled rice चावल
  • 1/4 cup finely chopped carrots (गाजर)
  • 1/4 cup finely chopped capsicum (शीम्ला मीर्च)
  • 1/4 cup finely chopped french beans (फनसी)
  • 3 to 4 cloves garlic लेहसुन
  • 1/4 cup finely chopped Spring onions white (हरा प्याज)
  • 2 tbsp chopped Spring onions green हरा प्याज
  • 1/4 tsp white/black pepper powder काली या सफेद मीर्च का पावडर
  • 3 tbsp schezwan sauce शेज़्वान सोस
  • 1 tbsp oil तेल
  • 1 tsp Vinegar सीर्का
  • 1/2 tsp red chilli sauce
  • salt to taste (नमक)

Instructions
 

  • Heat the oil in a deep non-stick pan or preferably a wok, add carrots, capsicum, french beans and some garlic. Schezuan sauce already has good amount of garlic so we will not add more garlic here. Add white part of Spring onions, green we gonna reserve for garnishing.
    1/4 cup finely chopped, 1/4 cup finely chopped, 1/4 cup finely chopped, 3 to 4 cloves garlic, 1 tbsp oil, 1/4 cup finely chopped
  • Add little bit of salt and pepper powder and mix it well.
    salt, 1/4 tsp white/black pepper powder
  • Add schezuan sauce to vegetable, ensure that gas is not at high flame at this stage. Reduce the flame to simmer. Mix this well.
    3 tbsp schezwan sauce
  • Since sauce is already cooked add cooked rice, little bit of Salt, Spring onions leaves, vinegar, chilli sauce and toss it gently.
    2 tbsp chopped Spring onions green, 1 tsp Vinegar, 1/2 tsp red chilli sauce, salt, 2 cups boiled rice
  • Serve Schezuan rice garnished with Spring Onions.
